Ingredientes
Azeite de Oliva Andorinha
800 g de filé mignon
Sal a gosto
Pimenta-do-reino a gosto
1 xícara (chá) de cebola picada
1 xícara (chá) de vinho madeira
1 cubo de caldo de carne
Batata:
1 xãcara (chá) de leite
1 xãcara (chá) de creme de leite fresco
Sal a gosto
4 batatas médias cortadas em fatias finas
1 xãcara (chá) de queijo tipo parmesão ralado
Modo DE PREPARO
Tempere o filé mignon com o sal e a pimenta-do-reino. Aqueça o Azeite de Oliva Andorinha em uma panela e frite o filé mignon, virando-o de vez em quando, até que fique dourado por inteiro. Retire a panela do fogo, deixe descansar e corte a peça de filé mignon em medalhões. Volte os medalhões ao fogo até que fiquem no ponto desejado. Na mesma frigideira, retire os medalhões e doure a cebola. Acrescente o vinho, o caldo de carne, misture e deixe apurar até reduzir. Quando estiver quase seco, coloque um pouco mais de Azeite de Oliva Andorinha. Sirva com os medalhões.
Batata: Em uma panela, coloque o leite, o creme de leite fresco, o sal e deixe ferver. Acrescente as fatias de batata, sem lavar para manter o amido e deixe cozinhar até que estejam macias. Coloque em um refratário, salpique o queijo tipo parmesão e leve ao forno médio (180ºC) para gratinar.
